About Carafe

Carafe Bistro – for those seeking a little Paris in Portland. Carafe Bistro has been serving outstanding Parisian-style bistro food in a lively atmosphere since 2003 and consequently has received numerous awards and accolades over the years. Some distinguished awards include Best Burger and Best French Restaurant by Portland Monthly and Best Happy Hour by Willamette Week.

Carafe’s design replicates the quintessential warm Parisian bistro found on many street corners in Paris. The menu features traditional French classics as well as modern interpretations of contemporary foods. Carafe takes great pride in their connections with the local Portland community and selects their foods from area growers and ranchers. In addition to a full bar, Carafe’s award winning wine list has great offerings from France and the Northwest.

Chef Brad Ryder

Brad began his culinary career by enrolling in the Oregon Culinary Institute and interning at the London Grill in the Famous Benson Hotel. He graduated from the Institute in 2009 and joined Carafe Bistro as a cook and trained under Pascal Sauton. He was quickly promoted to Sous Chef and helped Pascal run daily kitchen operations while learning the finer art of producing great French food.

After Pascal’s departure Brad was promoted to Chef and immediately got busy writing his new menu. Brad is most proud of his tender braised lamb. The lamb is slowly braised and sits atop a polenta cake and is garnished with glazed carrots, pearl onions and red wine reduction. He is also particularly proud of his grilled vegetable sandwich that has become an instant lunch favorite. In November Brad entered the “Pate in Portland” sponsored by the Northwest Food and Wine. Brad’s approach to his food can be described as sourcing the freshest local ingredients available and preparing them using classic French technique. His favorite foods are a perfectly roasted chicken, tender seared scallops and when he’s feeling casual authentic street style Mexican foods. Brad enjoys his trips to Las Vegas where he gets to see some of the latest creations from the best Chefs around. His favorite’s restaurants in Vegas are Thomas Keller’s Bouchon, Bradley Ogden’s at Caeser’s Palace and Central by Michael Richard. On his days off Brad enjoys fine cigars and spending time with the friends and family.
